Mmmm... apples!


So... what to do, what to do. The kitchen counter is covered with freshly-picked apples and we're just itching for something appley-delicious. Baking a pie is at the top of our list, but due to the boys' swim schedule, we've decided to wait until Saturday to give it our best effort-- we'll just have more time that way. In the meantime, we must bake something!!

Well, yesterday, Big Man's preschool teacher came to our rescue-- she sent home a simple recipe, along with her own hearty recommendation, for us to try. Try it we did; the boys gave it two thumbs up and Hubby loved it, as well. You just gotta love it when everybody approves! So, if you're looking for something quick and simple, give this one a shot... it's a keeper!

Apple Crisp

6 Granny Smith apples
1 single layer yellow cake mix
1/2 cup melted butter
1/2 cup sugar
cinnamon to taste

Preheat oven to 350 degrees.
Peel, core and slice apples. Place them in a 2-qt casserole dish.
Sprinkle cake mix over the top of the apples.
Mix sugar & cinnamon and then sprinkle over the top of the cake mix.
Pour melted butter on the very top and bake for 20-30 minutes, until top is brown and bubbly.
Top with your favorite vanilla ice cream and enjoy!
